When I discovered that Uncle Gigi also turned on the oven in the evenings to make pizza, I immediately thought: "Maybe now it'll turn out perfectly hydrated, with a very long leavening time." Then I went into the kitchen, looked at Uncle Gigi, and realized that if I'd used the word "gourmet," he'd have thrown a loaf of dough at me. Even when it comes to pizza, the philosophy here is the same as at the osteria: tradition, simplicity, and no frills.


Here pizza is made the way it used to be made in Italy.


It's the traditional pizza, the one with a fragrant crust, classic and authentic ingredients, hand-rolled and baked piping hot, so you can enjoy it with joy, without having to take a photo before taking your first bite. There's a specific reason Uncle Gigi wanted the pizzeria for dinner. He explained it to me while checking on a Margherita:
